How to pick, peel, cut, and eat strange looking fruit: pineapple, coconut, pomegranate, papaya, star anise, etc.
2. RANDOM COOKING VOCABULARY
The exact meaning of words like zest, caramelize, fold-in gently, poach, julienne. I see these words in recipes frequently and I'm like, "Uhhhhh, that sounds hard. Next!"
3. MEAT PHOBIA PSYCHOLOGY
How not to fear the redness and blood of fresh meat. How to debone, de-gut or butterfly chicken without freaking out. Also, overcoming your fear of making a dry turkey for the biggest holidays of the year.
4. DESSERT MECHANICS
This is a technical class on buying store bought desserts and altering them so they seem "homemade".
5. ORDERING-IN ETIQUETTE
No explanation necessary. This is the "easy" elective everyone signs up for along with Training Your Husband to Cook.

As far as the turkey is concerned, I was always afraid. My husband cooked it the first time so he's the turkey cooker in the family. I hardly ever cook chicken either. I'm always afraid I'm not going to cook it enough so it ends up dried out LOL.
Semi-Homemade on the Food Network Channel is all about making store-bought items seem "homemade" and directly out of your kitchen.
LOVE your post. We have so much in common. Bob is the one that peels (or whatever) to pineapples if we buy them whole. I'm always afraid it's going to prick me so I buy the pre-sliced. =)
I'm always worried that I'm not cooking pork or chicken long enough so mine end up being a bit on the dry side, too.
I hear ya! Cooking can be fun, despite the mishaps. But know that I'd do so much better if I just took a class.

Ha Ha Harvard! I have an Auntie that I call when I'm in a hurry to throw something fabulous together, I swear she can make anything store bought appear as if it were her own!
Maybe she should write that book!!! You have given me an idea for a post though!! I'm totally going to post some of her trick that I've used!
